Fall is almost here!!!

I can't contain my excitement!! I can't believe that fall is just about here, technically it starts on September 21st but hey, who cares! If you know me or have been following me for years, you know that fall season is my absolute favorite season! I love everything about it, the beautiful colors of the leaves, cozy nights in with friends and family playing board games, the cute fashion and of course, THE FOOD!!!!! As much as I love grilling and eating outdoors, to be honest, most of the summer is just too hot to eat comfortably outside - and being eaten alive by mosquitoes is not my idea of fun. So for me, eating a cozy dinner with my friends inside is all I think about on those unbearable hot summer days (You know I'll be wishing it was summer on January 1st) so I'm super excited to start whipping up some soups, stews, pies, cookies, roasts, all those comforting dishes we all know and love and can't wait to eat as soon as the weather gets a bit cooler. So before I start dishing up some new recipes on Laura in the Kitchen, I thought it would be nice to take you down memory lane with some of my favorite fall appropriate recipes.

A good pot roast is really hard to beat, it's so easy to make, it takes just minutes for you to put it together and cooks low and slow for hours making your home smell incredible!! My Italian take on the traditional roast is infused with dried Porcini and braised with Chianti, absolutely incredible I tell ya! The perfect thing to serve to friends and family, alongside a mixed green salad and maybe a warm toasted baguette, give me some now!


Oh how I adore a good pot of chili!! It's perfect guy food (and girl food, who am I kidding) to serve at  football parties. It's hardy, flavorful and easy! Make a big pot and serve it with my cornbread, you will have everybody wanting both recipes, trust me!




If you're looking for a delicious weeknight soup that's quick and satisfying, my Sausage and Kale soup has all that covered! It's a total go-to recipe for me all fall and winter because it's just so easy and quick to make. Give it a go and I bet it will become a go to recipe for you as well!


And last but not least, I have to end this post with my husband's all time favorite pie, the classic, Pumpkin Pie. I made our first pumpkin pie of the season today and I kid you not, he walked in the house and as soon as he smelled it, he jumped up and down with excitement haha. It's the symbol that fall is here and we just love this time of year so much! Our first official date was on September 30th and we got married on October 23rd, it's such a happy time of year for us.
